ZUCCHINI PIE - Page 75 - Two Weeks To Better Health
3 large Zucchini, grated, (approx 3 1/2 cups grated), 2 onions chopped finely, 1 1/2 cups gluten free self Raising Flour, 1/2 cup soy milk powder or alternative (optional), 4 eggs, 3 cups cooked brown rice, 1 teaspoon baking powder, 1/2 cup low-fat grated cheese (optional), 1 tablespoon olive oil, seasoning or veggie salt to taste, 1 - 2 cups water or veggie stock.
Combine all ingredients into a large bowl in the order listed above. When you get to the water part, just add gradually as you may not need as much water. Mix well and pour into a greased pie dish. Bake for 40 minutes at 180oC/350oF. Enjoy.
